Cognac matures in casks made from Limousin oak. This wood gives the Cognac is warm colours and releases its tannins as it comes into contact with the eau-de-vie. These casks are stored in different chais or cellars on the estate, according to their particular characteristics. The Master Chai, Olivier PAULTES, is responsible for changing the position of the casks depending on the atmospheric conditions; so, he will put the casks on the ground, clay, where it is humid, or in the lofts, where it is dry, to ensure the development of different flavours. He must also blend the eaux-de-vie to obtain consistent quality and characteristics.
